Our client is seeking an experienced and hands-on Regional Head Chef to oversee kitchen operations across three outlets in Malta. This role is ideal for a commercially minded culinary professional who enjoys balancing operational leadership with a strong kitchen presence.

The successful candidate will work closely with Head Chefs and Regional Managers to ensure consistency in food quality, drive operational efficiency, manage costs, and introduce new menu concepts. This is a dynamic role that combines kitchen operations, team leadership, administration, and strategic planning.

The Main Responsibilities include:

Oversee the day-to-day kitchen operations across three outlets.
Work hands-on in the kitchens approximately three times per week to support service, monitor production standards, and coach kitchen teams.
Lead, mentor, and manage the Head Chefs across all locations.
Develop and implement new menus and seasonal specialties every three months.
Monitor food costing, portion control, waste management, and overall kitchen profitability.
Source, evaluate, and negotiate with suppliers to ensure quality and cost efficiency.
Prepare and manage staff rosters for all kitchen teams across the three outlets.
Ensure consistency in food quality, presentation, and operational standards across all locations.
Conduct kitchen audits and ensure compliance with food safety and HACCP standards.
Work closely with Regional Managers to improve operational performance and customer experience.
Manage kitchen administration, stock control, production planning, and operational reporting.

Working Hours:

Monday to Friday on a 40-hour working week with flexible scheduling; outlets kitchens are typically closed by 8:00 PM, with occasional weekend event support required on a one-off basis.

Requirements

Excellent leadership, coaching, and team management skills.
Strong organisational and administrative abilities.
Thorough understanding of HACCP and food safety regulations.
Excellent English communication skills.
A valid driving licence and own transport are essential, as regular travel between outlets is required.
Flexibility to work across multiple locations and support kitchen operations when required.

Education and Experience

Proven experience as a Head Chef, Executive Chef, or Regional Head Chef within a multi-site hospitality or restaurant environment.
Experience developing menus and introducing new food concepts.
Strong knowledge of food costing, waste management, supplier management, and kitchen operations.
A recognised culinary qualification or equivalent professional training is considered an asset.
