We are currently seeking an experienced and creative Executive Pastry Chef to lead our pastry and bakery operations. The successful candidate will be responsible for delivering exceptional desserts and baked products while maintaining the highest standards of quality, consistency, presentation, and food safety.

Key Responsibilities

Lead and oversee the daily operations of the pastry and bakery sections.
Develop innovative dessert menus, pastries, breads, and seasonal creations.
Ensure consistent quality, taste, presentation, and portion control across all outlets.
Manage, train, motivate, and develop the pastry team.
Plan production schedules according to operational requirements and business levels.
Monitor food costs, stock levels, wastage, and purchasing.
Ensure full compliance with HACCP, food safety, hygiene, and health and safety standards.
Work closely with the Executive Chefs and Food and Beverage teams to meet operational and guest requirements.
Maintain equipment and ensure the pastry kitchen is organised, clean, and operating efficiently.
Support special events, banqueting functions, and new concept development.

Requirements

Proven experience as an Executive Pastry Chef or in a senior pastry leadership position, preferably within a high-volume hotel or resort environment.
Professional culinary or pastry qualification.
Strong knowledge of pastry techniques, bakery production, chocolate work, and contemporary dessert presentation.
Excellent leadership, organisational, and team-management skills.
Creative mindset with strong attention to detail.
Good understanding of food costing, stock control, and waste management.
Thorough knowledge of food safety, hygiene, allergens, and HACCP procedures.
Ability to perform effectively in a demanding and fast-paced environment.
Flexibility to work according to operational requirements, including weekends and public holidays.
